The Mac version does have more savings compared to Linux as it has some uncompressed texture files in the data for performance reasons. In the case of Mordor it is just a really big game and the data has already been compressed as much as possible.
Some games use uncompressed data which means their download size is much smaller than their install size. However a large amount of the data for Mordor is compressed textures and video which are already compressed meaning you don't get much saving by compressing them a second time for downloading. The game is compressed by Steam for downloading automatically just like all other games on Steam.
